The Bees Knees: A bright, refreshing Prohibition-era cocktail that blends smooth gin with fresh lemon juice and honey syrup. Lightly sweet with a crisp citrus edge, the honey adds a soft floral richness that perfectly balances the gin’s botanicals, creating a drink that’s simple, elegant, and irresistibly refreshing. Its playful name comes from 1920s slang, “the bee’s knees” meant the very best—a fitting title for a cocktail born during Prohibition when honey and citrus were often used to soften the rough edges of bootleg gin.
